How do chicken shops get the coating so smooth and sort of hanging of the chicken.?

Whenever i make it at home, even using Tex Mex Southern fried coating, it never turns out like that. The chicken from my local shop just sort of sits on the chicken all nicely. ive tried baking and frying mine but no luck.
